Delicious Breakfast Bake {with a Hash brown Crust!}

This breakfast bake is simple enough for a lazy Sunday morning breakfast but is special enough to wake up the family on any holiday as well. It would make a fabulous breakfast for Easter morning.

While there are several steps, the final result is well worth it - thick and hearty filling over top a crunchy potato crust. Made from simple, common breakfast items but put together in a new way that everyone will love. Even the kids tear this up every time I set it on the table, so that is always a winning recipe in my book. Plus, you can change it up in so many different ways to fit with your family!

8 large eggs
2 cups shredded hash browns
6 pieces of cooked bacon
1 ½ cups shredded cheddar cheese
1 Tbsp. vegetable oil
salt and pepper to taste

Cook bacon using whatever method you prefer. I like to lay my bacon strips on a baking sheet with a
lip, and place in a cold oven, turn oven to 400 degrees and bake until crisp, approximately 18-20 minutes.
Preheat oven to 425 degrees.

In a medium casserole dish- mix together hash browns, ½ of shredded cheese, and vegetable oil until evenly combined. Press into bottom and halfway up sides of pan.
Bake potato mixture in oven for 15-20 minutes until crisp and golden brown.

Drop oven temperature to 350 degrees

In a separate bowl whisk; eggs, bacon,remaining cheddar cheese, salt and pepper- pour into baked “crust”

Bake for an additional 20-25 minutes, until cooked through.
Allow to cool for 10 minutes, and serve.

You could also sub sausage in for bacon, and add in some delicious veggies like- peppers and onions, or try your favorite shredded cheese blend to make it your own.
